INGREDIENTS
- Avocados (1 per person) 
- Eggs (2 per person) 
- Bacon, cooked until almost crispy for topping, crumbled (use as much as you’d like) 
- Shredded cheddar cheese for topping 
- Salt & pepper to taste 
PREPARATION
- Preheat oven to 425F degrees 
- Half and pit each avocado 
- Spoon out part of the avocado (enough for an egg to fill the hole) 
- Place each half, meat side up, on a muffin pan 
- Crack egg into each half 
- Top with cheese, bacon and salt & pepper 
- Bake at 425F for 35 minutes (or until egg is visibly cooked)
