INGREDIENTS
Avocados (1 per person)
Eggs (2 per person)
Bacon, cooked until almost crispy for topping, crumbled (use as much as you’d like)
Shredded cheddar cheese for topping
Salt & pepper to taste
PREPARATION
Preheat oven to 425F degrees
Half and pit each avocado
Spoon out part of the avocado (enough for an egg to fill the hole)
Place each half, meat side up, on a muffin pan
Crack egg into each half
Top with cheese, bacon and salt & pepper
Bake at 425F for 35 minutes (or until egg is visibly cooked)
